How come when the curse is lifted all the effected people become mortal again but not the monkey???

Watch Curse of the Black Pearl again, if you can, and wait until the end of the credits. You see the monkey take a coin from the chest. Then, at the beginning of Dead Man's Chest, we hear that the Isla De Muerta and all its treasure has been lost to the sea. This means the monkey can't put the coin back and so will continue to be cursed.

Everyone (including the monkey) becomes mortal when Will drops the coins in the chest, but after the credits, the monkey goes back to the chest and takes a coin.

After the credits we see the monkey going back into the cave and taking a coin , turning back into the creepy undead monkey. Why don't people watch what happens after the credits?
