Well:
x^2 -2x -35 -> (x-7)(x+5)
x^2 - 49 -> (x-7)(x+7)
((x-7)(x+5))/((x-7)(x+7)) -> (x+5)/(x+7)
Not that it is of any use, but it looks better!

Your first step is to factor both the top and the bottom
(x+5)(x-7)/(x-7)(x+7)
Then you can cross out the things that are the same on the top and bottom
(x+5)/(x+7)
And voila, that's your simplified answer
