the idea is that particles aren't points in space, but bits of strings... (a 1 dimension object instead of a 0 dimension object)
It explains the weird phenomenons you see in quantum physics (god tosses the dices) in a more deterministic way (god doesn't throw the dices anymore)
well, read the wikipedia articles. they're quite good.
PS: some string theories think there are 10, 11 or 25 (or is it 26?) dimensions... There isn't a single string theory, but several. However, the M-theory manages to bind them all together somewhat, form what I understand of them.
