The advantage of outdoor learning is that you can take the student to the source, to learn from the thing-in-itself, rather than try to get the idea from books all the time.
I take my son to the metal junkyard with me, where I show him different metals, explain how machinery works, what are the compositions of substances from copper to platinum.
Or we took our children to the zoo, where we studied the animals, spoke to the keepers, stayed quiet in one place for a while and observed animals and plants. The kids love it, and are able to come back and relate to the books.
Sometimes I take my students or my children to stores, where we examine product and price, do calculations to determine cost, study the ingredients label, observe humans' behaviour as shoppers and workers, in other words, no end to what you can learn if you observe, be quiet and listen, and take notes.

Hmmm, let's see;
I used to teach some kids how to draw a tree indoor and it turned out they all ended up drawing similar one, you know, a straight thick brown line upward with a green circle representing the leaves. But then I took them outside and asked them to observe the real thing; be it a tree, a flower, bushes, whatever in their sight, and then asked them to draw whichever 'scenic' moment they wanted. Guess what? Each had drawn different trees with different colors and different scenic associated with each drawing.
And there was this particular subject of 'hygiene n sanitary' stuff; so instead of just reading and studying through textbooks, I asked them to meet up and have a relaxed conversation wtih the real people, I mean, the school janitors. Who would be best to tell the kids about how to maintain the school cleanliness than these people?
Well, I hope those two real-life experiences give you the kind of answer you're looking for.
