Well, it's not rather in shape that they eye changes...nor is it truly 'blank'. Are you placing this into emotion-wise senses of the eye? If so, it's because all of the nervous tension that the person placed upon the eye (whether blinking, furrowing the brows for anger, widening the eyes, etc.) get loose...and eventually leave it. Some, more than others, are actually relaxed when they are dead, so the eye remains relaxed.

Other than that, anything that would require force of expression on the eye leaves a dead person; thus that's why their eyes are 'blank'.

...(Perhaps I've said too much...^_^) 'Nuff said.

To see such blank eyes in a person alive, we need to wait till a person is very deeply lost in thoughts to the extant that he is not aware of his presence in his physical body. This happens on very rare occasions, and also with people who can sleep with eyes open (some children sleep with eyes open, usually only upto a certain age !).
Nature has given us the reflex action of feeling a 'jerk', or mild shock like feeling, when our body is disturbed by touch, for self-preservation ! But consciously, one can pratice to reach a level where he can shut off the sense organs, and when eyes are internally 'shut-off' without closing the eye lids, this blank can be noticed by an onlooker !

First- the dead person has no ability to blink (to restore eye fluid) + second- the situations (when you see them) that the dead person is in are mostly well lighted (constricts the pupils and no blood flow then restricted blood flow to the head which opens the corneas which opens the "soul"- thus the blind stare.
This is all hoopla compared to real.

As I understand it, a dead person lacks the ability to contract or relax the muscles that control pupil dialation. Once dead, the person's pupils dialate making them appear "blank"

A living person's eyes are constantly moving, even minutely.
Dead eyes do not move. They are also covered in a thin film.

because some people say your eyes are the windows to your soul, therefore when you're dead you have no soul!!
