Easement is a right which exists for the beneficial enjoyment of a land and is exercised upon the land of another person. The land or tenement for whose beneficial enjoyment this right is exercised is known as dominant heritage and the tenement upon which this right is exercised is known as servient heritage. putting up a gate on your own property is an incident of ownership.
No one can stop you from putting up a gate on your own property if you are not obstructing anybody's easement rights. But if your neighbours construct or shapes their property in such a manner that your beneficial enjoyment of that land is restricted then, you can assert your right of easement.

If you have an exclusive easement , meaning you or your property has exclusive use of the easement , yes you can do whatever you want to with the land, it automatically goes with your property, it becomes your property. Its the law of ingress and egress.

It depend on your community. Some housing do not want you to put any fence. But I think it's better with fences, pick good design that's not an eyesore in the neighborhood.
