Occupational therapists and Instuctional Assistants (this might be called a paraeducator in your local district) do most of this kind of work; along with nurses and special ed teachers.

A good major for this would be Physiology with a backgroung in education, or a degree in education with a background in physiology. My sister-in-law does this kind of work. She just graduated from Pacific U with a BS in Physical movement with a focus in exercise. She really enjoys what she does.
