At our school, we lay down, put our knees up, and cross our arms over our chest and hold on to our shoulders.

It makes perfect sense. It tests your abdominal strength, plus if you put your hands behind your neck, you would be straining your neck, which isn't good.

My gym teacher requires a sit-up to have your hands touching your shoulders (in the form stated above) and your elbows touching the middle of your thigh when you come up.
