No, they didn't hatch and do anything, they didn't hatch at all. They simply left. Whatever made you immeditaely assume they had hatched?
Any ant that you saw had hatched weeks earlier. When ants hatch they are grubs. They look like tiny maggots. They can't even move on their own.
As for the winged individuals you saw, they were simply the next generation of kings and queens. The reproductive individuals in ant colonies have wings so they can fly off and establish new nests.
Nothing in the least unusual.

You disturbed the nest just before the new
generation of queens and males were nearly ready
to leave it anyway. If you hadn't poisoned it they
would have come out in a few days anyway. As
the other answers have indicated these flying
individuals, those that survive, found new colonies.
Termites behave in the same way. Ants in a house
are not necessarily the wood tunneling kind, but
they might be.

They're queens and Drones or flying ants. They didn't hatch right away. At my old school, we had these huge, winged ants that came every year in may. We call them 'Sompopos de Mayo.'

These are probably alates - winged males and females produced for the mating season once per year. It suggets the colony is alive and well, not poisoned at all. They will take off at night, mate, and the females will head off to start new nests. (The males will fall to the ground, exhausted, then start foraging for food and get eaten by something.)
