Within the first hour the person would go into a panic and try to find a way out but after the first hour they would go into the first stage of melt down. Within 5 hours the body would go into exaustian and more than likely pass out. When they regain conciousness they will go into the second stage in which they have no idea how much time has passed and that's when they will begin losing touch with reality and eventually they will halucinate and die of dehydration shortly after.

Depends how long... If a person was to be placed in an empty room with no windows, doors and clocks for more than a day I believe they would eventually go insane.
