I'm a single mom of 2 working full time and if I go to school right now I will not see my kids for 18 months. That is the length of the course I want to take at a college.

Why paralegal?

Why be a bridesmaid when you can be a bride?

Finish your undergraduate degree, then go to law school.

Being an attorney is far more rewarding and lucrative; although more work and responsibility.

I think you should take an in-house course. I attended the University of Santa Clara and the paralegal course was taught at Bannan Hall under the purview of the law school. The courses were overseen by local attorneys, judges and experts. It is the only way to get a top-notch education that will be respected and recognized by the best firms. I worked in San Francisco where attorneys were hired from Ivy League Colleges and even the University of Santa Clara was not A+ to them.
