What is the Tx state laws regarding ex- employers giving information about the seperation of ex-employees?

an ex-employer talks to people (not other employers) about why someone no longer works for him. These people then call the ex-employee and let him know that his business is being spread around.

I doubt there are any specific laws detailing what you described. Generally, it will fall under a case of defamation or libel or slander. You could also seek redress for restraint of trade if you can prove that his actions are causing irreparable harm to you both personally and in earning a living.
