Easy, take a screenshot of the document by pressing "Print Screen" key. Then open a graphics editor such as adobe photoshop, paint shop pro, ms paint, goto edit, then paste as a new image. Then just crop out the unwanted area of the screenshot, save as .jpg, email.

You are going to have to do some work here. A .doc file is a text file, which allows for individual characters. A .jpg is a graphic file that doesn't allow for individual characters, and is more like a photograph.
Consequently, the only way to convert a .doc file to a .jpg is to scan it as such. You will need to print the document, then scan it like photo as a .jpg.
The person receiving this email will not be able to make any changes to the document.
