does it have two fans? one could be going out. run the car and check the fan, it might not be working right, working only in spurts. my toyota camry did that. took me forever to find out what was wrong.

Another thing to check would be your coolant levels, which others failed to mention thus far. In desert areas, (like where I live) its not at all uncommon for the water/coolant to evaporate over time, also you might have a coolant leak. Depending if the hoses have ever been replaced. If your car is low on coolant, and it gets too hot,you run the risk of warping the heads ( not cheap to replace ) and possibly even cuasing engine seize (engine locks up due to getting to hot) Checking the fans is a good place to start, but if that isn't it, keep looking. only a few things it could be.

Check coolant level and top it off if necessary. check the switch and see if the fan is actually coming on when the engine gets hot(running at idle for a few minutes should do it). If the switch and fan both work, and there's enough coolant, you might be looking at a new water pump.

How high?
Most cooling fans don't come on until 215 degrees F.
If you have air conditioning you will have two fans but one will only come on when the air is on.
The cooling fans have a relay that might be bad.
The coolant sensor switch controls the fans through the PCM, and then through the relay.

check your fuses, water level , fan thermostat
then i would concider wiring up my own fan wiring from the battery,via the thermostat to the fan..
