Because he scares that the gun would hit his head. Well, after all, superman is still a man. It's a natural reflex to duck. I would also do the same ;-)

The cartoon is loosely directed without much thought. due to deadlines.
While in the movie the director is not a partner in the venture.
So the actor just dramatizes it.
He forgets he is a man of steel, so he ducks. the shoot was reality. whilethe bullet was digitized, a computer animated rendering.

supeman is a backtofront kinda guy. He wears his Y fronts outside his tights, he can take a high speed bullet, but cant take a slow moving gun cos it would go right thru!

He has to show his 'human' side sometimes to create a public image. He will pick the gun up, twist it with his bare hands in order to say F U to the villain and to say ' be cool' to the punters.

Coz MAYBE it hurts MORE when someone throw stuff at him....no...seriously its just one of those tricks to make u think that
"Wait he used another trick...he ducked!" my point is if he tries to let ppl throw things or kill him by gun ppl get tired of only him pretending not getting hurt..i hoped it hepled.

because when he gets shoot it hurts, i can crush a bee in the palm of my hand but when one buzz around me i duck.
