The seams on clothes are the most dense portion of the material, and therefore the heaviest (per square inch). The dryer acts as a centrifuge, extracting (or pulling) the heaviest portion to the outside.

valerievanhorn is correct. when the clothes are made, the seams are on the outside. we turn the clothes inside out to wear them. clothes that can easily be turned will end up with the seams on the outside. so, shirts and skirts will turn seamside-out, but your jeans won't.
