The ones that are man made tend to be straight lines, the ones that follow natural boundaries (like the Red River between Oklahoma and Texas) are not.

There is one place where:

1. Four Corners Monument
The only location in the United States where four states, Arizona, Colorado, New Mexico, and Utah, meet in a single spot. Standing on the brass cap allows an individual to stand in four states at one time. The monument is located entirely on Navajo Nation land, please respect their land and customs. The Four Corners Monument is approximately 67 miles west of Aztec.

Once the US had claimed all of the territory that is now the 48 contiguos states they had to divide it into territories. The US sent out teams of surveyors to divide the land into chunks, because straight lines are the easiest to draw on a map and give the easiest math the surveyors chose straight lines for most of the borders. If you look at states like Idaho you will see that at times straight lines were not always easiest, and so the borders became crooked.

Because the guys the drew the lines were right-brain thinkers only and lacked imagination. The Being the drew the squiggly lines ( in other words, rivers and mountains, Etc.) is not limited by the linear thinking found in the right brain. What if God was one of us? :-)
