The Fantastic Four. Very good question, however, The Fantastic Four will win this fight and here's why:
Mr. Fantastic vs. Mr. Incredible - Mr. Fantastic
Mr. Incredible is exactly the same like The Thing in strength (only that he has a bit more brains and that's why he ouwld win if the two of them ever faught, and which answers your next question you've asked) and Mr. Fantastic can defeat The Thing any day. All he has to do is wrap around Mr. Incredible and then immobiliaze him since he can do that to The Thing and then suffocate him.
Elastic Girl vs. Invisible Woman - Invisible Woman
All Sue has to do is turn invisivle and then put a force field around Elastic Girl's head in order to ssufocate her. Actually she might get away from that since she is elastic, so Sue would have to completelly wrap her around in a bubble and then there's nothing Elastic Girl can do.
Dash vs. The Human Tourch - The Human Tourch
Well, first of all, I don't see anything that Dash can do to defeat Johnny. Johnny can fly and and think he can go fast enough to catch up with Dash and burn him, if not, he would have to do his Super Nove trick and that will give him the win for sure.
Violet vs. The Thing - Violet
This is the only fight where a member of the Incredibles would win. Just like Invisible Woman (since The Incredibles is kind of a rip off The Fantastic Four), Violet can turn invisible and put a force field around Thing's head and suffocate him. However, this might not work since Thing is such a big and scary too, guy, and Violet is just a teenager and from what I saw in teh movie, she's not too confidente in herself. But after seeing her family gone, she will do what ever it takes to defeat the Thing. Still, once defeated, Violet has to take on the rest of The Fantastic Four and I'm afraid that she will loose.
So there you have it, case closed.

The Fantastic Four would win. I believe Ben Grimm is stronger than Mr. Incredible, and that Mr Fantastic has more skill with his elasticity than Elastigirl (not to mention that he's FAR smarter than anyone on the Incredibles team, but even if that's in question there is NO WAY Dash could take on Johnny Storm. Johnny can heat up to nova intensity and has ranged attacks that Dash (who's only a kid) couldn't handle. Sue Storm has practically unlimited power with her force fields (Violet doesn't) AND she can use them as WEAPONS, creating many seperate force bubbles and shapes (like spikes or mallets). Violet can't do that either.
Then add the fact that the FF acts as a team in most instances. They don't often divide and fight one on one exclusively. You may be fighting Reed Richards when you suddenly realise it's very hot and you can't breathe. That's because Sue and Johnny had two seconds on their hands so Suzie put a force field around your head (robbing you of oxygen) and Johnny threw a massive fireball at you. Don't bother retaliating. They've gone back to other enemies. Besides Reed just hit you with a hardened mallet shaped fist when you turned to see what happened.
Of all the super groups out there, the FF works zone most often. In other words, they work as a TEAM. The Incredibles can't pull that kind of on-the-fly strategizing off.

The Fantastic Four. Because they are more fantasticer. Besides, Mr Fantastic could hit 4-5 people at a time, and Invisible Girl can kick butt. The human Torch is pretty cool and I don't know what the thing is supposed to do.

FF would win, they have more understanding of fighting, they have fought bigger badder wilder creatures than the incredible, i mean who takes on Galactus and lives t tell about it not the incredibles. the two kinds are inexperinced and once a threat is shown by them the FF would have no problem stopping them.

They would fight to a standstill until they realized that they had been tricked into it by the evil Snow Man (gee, I wonder who HE could be?) and then team up and use their combined forces to wipe up the five boroughs with the bad guy! And they would part as friends.
