what would be the better more honorable thing to do: give up for fear of becoming fake one day (while you're still on top), or standing strong and slowly letting people tear you down until everything's fake or fantasy

These are sort of unrelated scenarios. Giving up out of fear is ridiculous, and unless you're precognitive, you have no idea whther you're going to succeed or fail. Abandoning something because it turns out to be a bad idea is another thing altogether - that would fall more under trying to correct a mistake, and would be aceptable.
As for your second scenario - this isn't really "selling out", per se; selling out is a decision to alter your principles or stance - and if you're letting people tear you down then it's really just another form of giving up.

Really, it all boils down to your morals and motives in a given situation. I'd rather make a reasoned decision to give up - and hopefully, I would never choose to sell out.

Tough choice. I'd have to say, standing strong. Afterall, people can be wrong and they some times misjudge.
