It you are speaking in a future tense ie:
I should hurry before the opportunity passes me by.
Or
Perhaps I should hurry before I let the opportunity pass me by.

It depends on the helper words that accompany the sentence.

Haha, that dude 'proofread' your sentence and didn't even correct the spelling of SENTENCE, and he's looking down his nose at you?! The opportunity passes me by is the correct grammar.

it's either passed, as the man says, or passes, if it occurs in the present tense.

Passes. "Opportunity" is singular. Like, "the man eats", not "the man eat".
