This is a holdover from long ago when the composition of the moon was a subject of speculation.
At some point in time, the discussion was dismissed as being pure conjecture and someone was quoted as having said that "for all we know the moon is made of Swiss-cheese".
Sometimes a statement like that just sticks around. It became an urban legend of comedy. I doubt anyone really thinks that the moon is made of cheese, but it is a phrase that is often tossed about for humor.

The chees reference most likely comes from the visible craters lookimg like the holes in swiss cheese
The cream cheese referense may come from the apparent texture
And if you ever hear "Green" cheese, that was left there by the Martian explorers.

Swiss cheese is the correct referral. However, you may have heard cream cheese bc it is more delicious.
