Because the dough for the buns expands when it cooks. This prevents the over-extended bun from sticking.

It also makes it easier to silde the spatula (or whatever you use to remove the buns from he tray) axcross the tray to get to the bun..

You mean as opposed to just the exact spots where the buns would be placed? I supposed just to make sure all potential spots are covered. "Just in case".

As an alternative, you could use a piece of parchment paper. It is made especially for baking. Baked goods do not stick to parchment paper.
