There isn't a nozzle on a bottle rocket, its just an open end of a small tube of plastic.

For rockets in general, their exists an optimal shape and size for the surrounding air pressure and thrust from the throat (the part that leads to the nozzle.) As a rocket goes up in the atmosphere and the ambient pressure drops, the optimal shape of the nozzle changes. Many of the rockets that man has launched into space have nozzles that adjust to maintain optimal performance.
