For starters, there are things that are not hot at all which can be quite good, especially for a foreigner:
Carne Asada - "roast meat" - this a thin steak usually marinated which is quite tender (usually) and will come with Mexican rice, mashed potatoes or french fries.
Milanesa - "breaded cutlet (schnitzel)" - very popular and just like a wiener schnitzel, will usually come with the same as the Asada.
Arrachera - Mexican style "skirt" steak - one of the most tender and delicious cuts of meat avaliable in Mexico. It is simply delicious! It may come as above, or in more "Mexican" traditional restaurants it come with "chilis toreados" (really hot green "Arbol" chilis, hand rolled to make them even hotter, mixed with fried onion) this will be on the side, but BE CAREFUL. Also frijoles charros "cowboy's beans" often very good, sometime some scary ingredients though.
Huachinango - "red snapper" - most popular style would be either a filet or whole fish in a "mojo de ajo" sauce (simply garlic and butter), very, very delicious.
Pollo rostizado - "roasted chicken" - perhaps I'm prejudiced, but I really don't think anyone on Earth can roast a chicken better than the Mexicans!
There are also the incredible popular "tortas" which are like sandwiches made in large flat buns called "teleras." These can be made with ham and cheese, steak, "milanesa," pork, eggs, bacon, chicken, and all kinds of combinations. They come usually topped with cheese, tomato, avacado and if you want, hot chili pickles.
Note: you will almost always be asked first if you want chilis, or hot sauce on your food. Most food like the dishes above all come without anything hot.
Of course hamburgers are very popular almost everywhere in Mexico, if you need them.
A great treat is to try the various types of tacos avaliable:
Carnitas: "little meats" - deep fried leg of pork (or mutton in some places) chopped up and placed on a soft tortilla, often with a mix of cilantro and onion sprinkled on. very tasty.
Pastor: "of the shepherd" - spicy, marinated pork cooked upright on an open grill, like Greek "souvlaki" meat. often served with the cilantro and onion mix with a bit of pinapple - (to die for!)
Pescado: "fish tacos" - In the beach areas, you will find some very delicious fish, crab and shrimp tacos. You will need to check if they are "picante" first.
(Ignore idiots who say to avoid food cooked in water. If the water is "cooked" then obviously its safe. Almost every place you go that has tourists will be safe. Mexicans themselves have become very careful with water, using only bottled water for drinking and disinfecting water for washing veggies. Nobody prospers if the tourist is too sick to eat! Outside the tourist areas yes, you'd better be careful. Eat only in the larger more modern looking restarants, eat nothing raw and drink only bottled water.)

It depends on what you like. I heard that "mole" was really tasty, it's chicken with a chocolate sauce. It sounds weird, but it's very popular. Go for anything with tortillas, they make the best homemade warm flour tortillas there. I'm getting hungry just thinking about them! =)

Mole poblano, if you are going to central Mexico try enchiladas mineras... They are a regional specialty in Guanajuato. FRESH GUACAMOLE !! you can't beat it! If you're brave and want to try foods you're not used to try menudo, birria, cabrito.

Try avocado, mango, watermelon, "tuna" , shrimps, a kind of mozzarella cheese (in Oaxaca),TEQUILA, coffee liquor.
Attention with the spicy food!!
