Yes, I've done that, and it works fine. You just get two USB keyboards. Or one USB and another PS2. Some joysticks can emulate keyboards.
You won't be able to have focus on two windows, so it won't help you if you want to somehow use a single computer (dual monitor) as two computers.

theoritically u can connect any number of keyboard or mouse to a computer.. the only limitation is the number of usb ports..

the kvm switch will do that. i do that with mine one for typing and another for gaming.
