i think it really depends on the professor for any of these classes.
in my experience, intro to philosophy was challenging with quite a bit of reading and writing, but i know for others at different schools, intro is confusing and difficult, but there's not much of a writing requirement. of course, i'd suggest taking philosophy (i'm a philosophy grad student), but it's really hard work if you're going to take it seriously. it's definitely not an easy subject.
i also took an intro world lit course that was the most unbelievably boring class i've ever taken. i hardly did any or the reading, almost never showed up to class, and wrote garbage papers and still got an A. this is what i think you should take if you're just taking it because you have to take something.

I took intro to poetry. It was a blast, but then again I had a great teacher and good classmates.
You really don't write that much poetry, you actually study the types of poetry there is out there and learn about some great poets.
You critique poems, it was a great class. Not too much writing.

This is tough....I would go with philosophy. I took philosophy because it was required and had absolutely no idea what was going on and somehow still passed with a B. I am the same as you. I hate reading and writing papers. Also, I think philosophy teachers are different than those hardcore english teachers.

if u dont like writing papers or reading you shouldnt choose fiction or poetry because that will probably include more reading than the others
probably philosophy is the best to choose

I'd steer away from the poetry if your patience is low...on the other hand you can always make up stuff and say it's all about the interpretation; without actually thinking or reading.
This of course, does suck all of the real fun out of poetry, but it helped me out a few times.

Depends on what you like, really. Personally I would choose Multicultural Lit. only because I like pretty much anything that's foreign to me. I love to learn about other cultures, their histories, experiences and everything. I think literature of another culture would be fun to learn!

actually Spanish. I worked in nursing in So. California for 8 years and bilingual nurses are in lots greater call for. so a strategies as your nursing resume, philosophy, ethics etc. are ho-hum, yet Spanish/English on your resume will in the present day get you to the front of the line, generally over nurses with greater adventure yet basically one language.
