Actually, they are awesome when you slice them in a quarter like size and saute them with some butter and brown sugar........Soooooooo awesome. Not very hard and only takes like 3-5 mins. They become so tender and the nautural sugars come out and actually taste sweeter. Try it out.

I like what's called "green tips", which are mostly yellow and ripe, but still firm. These are also what most restaurants carry.

Very ripe and sometimes frozen (try it - it's almost ice cream!) Can't tolerate the green ones, sorry.
