Shaanxi is a province in China. I would appreciate any help with the pronunciation, but I am more interested with the amount of syllables it has… hence the question.

Most definitely two.
It's actually two words, and if spelled by the Ping Ying, should be Shan Xi.
But as you know in chinese if you pronounce the word in a different way it has a different meaning, hence so as not to confuse Shaanxi with its neighbor Shanxi, they changed the spelling.
