I have no idea what you'd like me to say to this question but I personally have no idea what initially happens to a carrot in space.

You've got me thinking now!

I think the size of the carrot would dramatically shrink and the carrot would float throughout the space because of the less amount of gravity in space compared to the gravitational potential energy in the surfaces of the earth.

The carrot turns into cheese and then back into a carrot again. It's all due to the imaginary yet powerful cheese force which governs all matter in the universe.

Everything is made of cheese. When exposed in the outer regions of space, matter turns to its true self--if born on earth first. Other objects outside the regions of Earth already cloak themselves in a special cheese-observation-proof coating just to where their innards are like that of cheese, yet we cannot pierce that other shell to see them in their true nature---AS CHEESE.

I would presume the concentration gradient of gases inside and outside of the cells in the carrot would be so great that the carrot would explode due to pressure.
