This is a difficult question, perhaps even impossible: To narrow all the movies one loves down to just ONE! I'm not sure if I could do that, but I do know that if I had to it would be one of the following:
Amadeus - this has all the right components, performances (especially F. Murray Abraham), soundtrack, script, look, etc.
Ravenous - again all the right components - check out the amazing soundtrack.
Glen Garry Glen Ross - brilliant cast, Al Pacino gets to say some pretty cool stuff
The Dresser - both Albert Finney and Tom Courtenay are excellent in this.
Erasurehead - weird and wonderful as only David Lynch can be

Movies that seem to stand the test of time on cable which includes Cool Hand Luke,
Godfather I&II
Groundhog's Day,
Shawshank Redemption
Jaws,
Wizard of Oz,
Planes, Trains and Automobiles,
A Xmas Story,
Surprisingly I don't seem to notice Gone With the Wind Played very often..
Anyway, keep shaking the bush boss and get mad at those damned eggs.

Oh yes MtMind...I agree. My favorite line from that movie is after Luke eats all those hard boiled eggs and George Kenndy says "that Luke is one rotten egg!" And then the soundtrack goes...wha, wha, wha!

One Flew Over the Cuckoo's Nest... it captures the essence of the book. I think it's the only movie made from a book that I wasn't disappointed in.
