I make all sorts of "herb cubes" by chopping herbs and adding a tiny bit of water. Then I pour the herb mix into ice cube trays and freeze. Once they are frozen, pop them out and place them in plastic freezer bags. They are great all winter long!!!

I freeze mint. I take a couple of plastic containers and put about 1/2 inch of water in each and freeze them. After they are frozen, I take them out and add the mint in one of them and then add the other on top of the mint. This will keep the mint from sticking out of the top of the water. Then I fill with water until the water is to the top of the last frozen piece. When I want to use it, I run cold water over it and then drain and pat dry. I don know if this will work with cilantro or not. Good Luck

Dried for sure.

Freezing it will make it wilt and rot instantly, the second it is defrosted
