If you know you are going to be in a situation like that take precautions. Don't eat for instance just before a test, or giving a speech if you will be anxious. Instead drink a small amount of mint tea. (Not enough to give you a nervous bladder) This will keep your stomach calm. Staying away from spicy foods helps too.
If you don't know it's going to happen, take slow breaths on a three count breathing in through your nose and out your mouth. While you do this think of the nervousness as being swept into your breath on the inhale and pushed out of your body on the exhale. It always works for me.

Ways to relax:

1. Get lots of sleep (always get 8 hours/day)
2. Breathe slowly out of your heart and not our of your head.
3. Be ahead of schedule so that you pace yourself better.
4. Avoid traffic or times where there will be long lines at stores.
5. Get a massage and facial once a month
6. Listen to classical music (try Bach's Brandenburg Concerto #3)
7. Every morning, stretch to wake up your muscles so that you will feel more energetic.
8. Avoid too much coffee or foods with caffeine
9. Have an hour dedicated each day to just sitting down and reading or watching tv or something that allows your body to rest.
10. Eat healthy fruits and vegetables (carrots, apples, oranges, cucumbers) daily as snacks. Foods like this contribute to a healthy heart which means lower blood pressure which means the ability to relax easier.

Lie down, slowly take a few deep breaths. Let your mind drift to a relaxing scene, like in the middle of a woods with a cool breeze blowing through the trees and the big white clouds slowly drifting across the blue sky.
