If you think cats poo is bad, wait till you see what dog poo is like if you got a dog. Cats are very hygienic in comparison. They usually poo on soft earth, and burry it after themselves.
Try making an area specifically for cats to poo in. Soft earth and sand, and move any old poo onto it to help them find the right spot.
Rather than stopping them defecating in your garden, encourage them to defecate somewhere in your garden and discourage in other areas by the methods suggested in the other posts.
Some people I know have used a mock cat in the garden, with marble eyes which stops other cats entering the garden. Pepper has been used, as has water pistols when the cats jump up on the wall and try to enter the garden.
If your garden is quite large however, you don't have any hope of keeping cats out.
Some other options might be to attract them to your neighbours garden by growing catnip under the fence or some other place where the cats might be attracted.

DON'T USE MUSTARD! Never ever use mustard. It can make a cat foam at the mouth and it really isn't good for them, and cayenne pepper isn't pleasant either. It can have the same effect as giving the cat a curry, which can make the situation somewhat worse. I found that the best way is to put up quite thick wires around the top of fences, nothing sharp and not too ugly looking, but it does stop them from being able to jump up and scrabble over your side of the fence.

I had a problem with cats using my rose garden as a litter box. I found that crushed egg shells are helpful. The cats don't like the texture and will usually stay away. The egg shells also act as a natural mulch and help restore the calcium to the soil. Just keep the shells in a zip lock bag, crush them up, and sprinkle them over the open areas. Good luck.

Antifreeze will kill them.
Spread a little black pepper around the garden, that should keep cats away.
I used to have a cat that liked to crap in my bathtub. Black pepper worked on him, it should work for gardens too.

either spread cayenne pepper around the areas they use or use tea tree oil ..you can also get high frequency noise generators to scare them off(not too effective)or you can buy lions urine ,the theory being a big cat marks your garden as its territory thus putting off the local cats ....if not get a dog
