Check your water for acid and nitrate levels. If your fish act "nervous" and dash around a lot then your water is likely filling up with acids and waste nitrogen product. change the water, but let the new water sit uncovered for a day to let chlorine gas off into the air before you use it. You might like to use some of the chemical modifiers to get rid of chloramines. just a few drops at a time, and clean your filters. Using a charcoal filter sometimes helps but that should only be an emergency measure(carbon loads up and quits working after a week or two). Don't overfeed, not any more than they can eat in five minutes, use a timer to check, even a watch. They are better off a little bit hungry than overfed.
I just notice that you said "Had" as in past tense, Oh well, maybe this will help if you get more or somebody else will find it useful, and yes I have had this happen a couple of times from overloading a tank.

Yes I had a goldfish that committed suicide. I saved him once. But I found him months later on the gtround again, he had succeeded. However, I too got a lid for my tank...and this hasn't happened since.

Something's up with ure water maybe. It's just like when whales beach themselves. Apparantly sometimes its cause the ocean isn't clean enough or something for them so they try to get out.
I remember one of my goldfish doing that once when I put her in another bowl while I was cleaning the tank.

Some fish do that.
I'd loose my iridescent sharks if I didn't have a lid, they get startled and all hell breaks lose.
It's sad, I lost my Golden Algae Eater that way.
He fell like 5 feet.
I wasn't home my bf heard him jump and stuck him back in, but the fall is what killed him.

The main problem is that there is no reason for you to not have a cover on any fish tank.

a couple weeks ago we discovered we had a suicidal shark type fish in our 500 gallon tank. He jumped out and we found him at the back of the tank after he had rotted! :(

If you solved the problem then do not worry who else has had it before...BUT to be honest I never had the trouble with GOLDFISH but with Betta they are looking for another feeding hole that is what bettas do...maybe a clean place too!
They are NOT NUTTERS! NOT MENTAL!

my family had a few goldfish some years back,
i put his bowl by the sink to get ready to change the water
as i was purifying it, he mustve jumped down the drain
cause when i went back he was gone and there was water all over the counter leading to the sink.
it pretty much traumatized my little brothers
