Not all new Mercedes" come with real leather interior, rather a leather substitute. Salesmen won't tell you that unless you ask. So, you are most likely smelling a synthetic material of some kind.

This probably has something to do with the upholstery and the textiles used in producing said upholstery. Also, on hot days, with all the doors and windows closed, those polyurethane and leather components will start to get warm and release the slightest bit of fumes causing that odor.
