When you change the colour depth (8- 16 - 32 bit) it restricts the resolutions you can use - if you set the resolution beyond a certain size it will automatically switch to a lower colour depth. This is typical of the default Windows display drivers, you need to make sure you have the drivers for your display hardware installed, if they're not then you should either install them from the drivers CD that came with your computer/motherboard/graphics card or go to the manufacturer's website and download/install from there.
To sum up, you need the display drivers for your display hardware, whether that is on your motherboard or a graphics card.

Sounds like the driver for your video card is not correctly installed.
Go into the control panel
Click on the system icon
Select the Hardware tab
Click on the Device Manager Button
Find the hardware listing for display adaptors and click the little + in front of it
Should expand and show the installed video cards
Find your card, right click on it and uninstall it
Reboot the PC and it should reinstall the card
If this does not resolve the issue, you will need to go to the web site of the manufacterer of your PC (or video card if you added it) and down the lastest driver for it. Follow the install instructions on the web site.

Go to Control Panel - select Display and then on the top tabs select "Setting" you will find these can be altered here.
But by the sounds of it your display driver is incorrect. May I suggest that you go into "Advanced" while in the position above and changes the Monitor to default default Monitor unless you can see you type of monitor in the list (60Hz if possible) and the adapter to Default adapter, then restart your computer. Most graphics cards come with their own CD for installation. If you havn't got one you can go into Control panel - system - Hardware - device manager - and double click display adapters, right hand click the adapter that appears and select update driver.

go to control panel then display then settings...change the resolution there and make sure you apply before pressing ok that is maybe why windows is not saving the new setting.hope this helps.

Check you have the correct drivers installed for your graphics card or (onboard graphics).
Look in Device Manager, next to Display Adapters, if there is a yellow ? mark, you need to go get the right driver.

try reinstalling your video/audio driver's that came with your pc
then change your screen res
standard setting is 800 x 600 16 or 32 bit

the 1st thing to do is check waht video card you have, you can do it so by right-click on the desktop and then select properties>settings>advance>adapter.
once you see the model and manufacturer you can go to their web site and download the lastest software and drivers and this should solve your problem

You need to find out what your system uses for its display For instants mine is VIA/S3G. I had to go to the web site and download a newer version when mine refused to work right.
