Get creative!
Build a gang of 4 people (including yourself), get in a car, and raise some hell! If you beat the game w/o cheat codes, thats a whole new door as well. I personally like freeflying in a stunt plane or the huge airline cruiser (though its EXTREMELY difficult to fly)

Just run around shooting for fun, get your star rating up, finish 100% of everything.

get hookers, kill as many people in five minutes as possible, get a high wanted level and see how long you can last, try to get 100% so you can get the tank, get creative with satchel charges
