I'm sure eventually they will. The technology is still new, though, and limited to gadget freaks and cinephiles who really want that 720p/1080i/1080p resolution, so I believe they'll hold off on it until the format gets more widely accepted--TV shows are a very specialized DVD market, and the early adopters are more likely to go for movies that provide that big movie experience.
Another downside is that many TV shows--namely the older ones, and especially the ones shot on video--wouldn't benefit from the high-def treatment, and won't look much better on HD-DVD/Blu-Ray than they would on DVD. But I can see where HD-DVD/Blu-Ray's higher data capacity can work to a different advantage: you can pack an entire season's worth of shows, plus extras, in one or two HD-DVD/Blu-Ray discs.
Anyway, the shorter answer is, it'll happen, but it'll be later than sooner, and it'll probably be done with newer shows (that can take advantage of the higher resolution). The short-lived cult sci-fi hit "Firefly" is being remastered for high-def airings on Universal's HD channel; I wouldn't be surprised if it were the first TV show on HD-DVD, considering that Serenity (the feature film based on Firefly) was one of the first HD-DVD's, and that a lot of the early adopters who have HD-DVD players are the techie geeks who'd be into "Firefly."
