If you mean the fuel cutoff switch,don't do it. (you can, for test purposes only. Never drive it with the switch bypassed.)
If you get in a serious crash and a fuel line ruptures your car will spray gas until the tank is empty or the key is turned off.

If you mean the airbag sensors. Absolutely not.

The inertia switch has a resetable switch on it that shuts off the power to the fuel pump in the event you're in an accident.
Most of the time, these are mounted under the carpet on the passenger side kick pannel.

Pull the carpet back and look for a small device with two wires going to it.
There should be a small push button on it.
