How do you beat that ice guy that shoots the ice music notes at you?

It's just a matter of using the Reaction Commands to take out the musical notes (after he says "Dance, Water! Dance!"). You have to get rid of them as quickly as possible before the counter runs down. Don't bother hitting him during that point. Just get rid of the notes. Alternate the music notes with magic, like Fira or something that'll take out more than one at a time.
After all the notes are gone, lock on to Demyx and just whale on him. If you keep hitting him, he won't really be able to do any other commands.
He's fairly weak, and doesn't do much damage, but the notes are just a little bit tricky.

Use the reaction commands to grab onto one of the notes and swing it around and around, try doing it in the middle of the others so you will get done faster because there is a time limit for defeating the notes. Then when they are gone attack demyx. When he summons more, stop attacking him and go for them, and continue on until you defeat him.

hit his minions as fast as you can and use triangle every time then when he's knocked out use trinity limit

U keep hitting them back until he becomes unconscious then attack his head. repeat
