Shadows of the empire for me (its the story of what happens between episode 5 and 6) , after that I say the han solo trilogy, then the x-wing series.

I like Heir to the Empire trilogy. Another interesting book is Splinter of the Mind's Eye. It was written before Empire Strikes Back was in the theatres.

I like the Star Wars Jedi Apprentice series. It is before Ep. I and it's Qui-gon and Obi-wan as his Padawan going on jedi missions. There's like 20 of them and they're really good.

Tales from Jubbas palace

I love the way it gives a background story to each of the charecters we see in the ROTJ film.
It really adds more depth to it when you watch ROTJ as you know the charecters and a bit about their lives
