Wow, 8 years and you are still actually "celebrating" your wedding anniversary. I didn't even get a card for my 7th. You should win an award. I think the fact that you care enough to even ask that question makes your wife a very lucky women.
Having said all of that...depends on what your wife likes to do. Does she really like to "go out" or does she prefer a quiet evening?

Take her to the place where you first met her or where you proposed and maybe make a hand made photo album of pics of you and her and maybe on the last page say how much you love and appreciate her.( Remember make it very creative, go to Micheal's or something to buy the supplies)

Take her to an ice skating rink. Then, skate on the ice and make a figure 8 and say "see honey, just like how many years we are married".
