You are out in the woods. You shoot a deer. To preserve the meat, hang the deer up by hind legs. Cut jugular veins to drain out blood. Cut the deer from the pelvic bone to the neck. Remove all of the internal organs. That is gutting.
Field dressing is skinning the animal, removing head and feet. Cutting the carcass into sections, in the woods, so it is easier to carry back, store, use in the future.
I prefer to leave Bambi's kin alone.

Gutting an animal means to remove the innards, entrails, etc of an animal.... Field dressing means to go a littel further and remove all inedible bits such as head and feet..

it means that you literally "gut" the animal. you take out all of the internal organs. on really big game, they even chop it into quarters so that it is easier to carry. both methods make the animal lighter.
