Hair and nail growth continue for a time after death.
Sun tanning is a chemical reaction where UV causes melanin pigment in skin to darken. So this could continue after death as chemicals do not 'die', it is the mass functioning of interdependent organs and systems which constitutes human death.
For this to happen a strong source of UV would be needed (eg a sunny day) and this would raise temperature and accelerate the decay process. So. it is debatable whether the dominant effect observed would be the tanning or the decaying.
How about beach parties for zombies at Montego Bay?

does cremation count as a really really deep tan?

the biggest problem i have with leaving a dead body out in the sun is usually the smell, i'm not concerned with if they get a tan or not.

the smell usually alerts the neighbours.

wow.. what a question! I would imagine the same way you leave anything out in the sun and it can burn so is the same for a corpse... but not entirely sure... wow good question, had me really thinking lol. I'm gonna put your "?" on watch list cause I wouldn't mind seeing other answers.
