I wish to do something more than merely donating

You can't. By the time your gift or donation arrives in the country or region of the poor people, it is syphoned off by the evil leaders who keep their people in poverty. Poverty is nothing to do with shortages, it's to do with dictators.

Commit to paying your own employees a living wage. It's a great start. In the hospitality industry, many employees are "the working poor." Encourage your husband to hold monthly, free, informational seminars for his employees, hosted by professionals in different fields, teaching them how to do things that many of them can't: balance a checkbook, create a savings, help their children get a higher education, etc. When I was in the hotel industry, even though it meant turnover and retraining issues for me, I always considered it a great honor to help any of my employees better themselves and find higher paying employment. The company, rather than I, had the final say on their wages, and most often it was not enough to live above the poverty level, especially for housekeepers. Give everyone you can a helping "hand up" rather than a "hand out."

Invest in microfinance organizations that make small (tiny) loans to help people in the inner city or in poor countries to start small businesses and escape the poverty cycle. Here are a couple:
