I am an MD. Your question would be best answered by understanding muscle physiology. If your human were a marathon runner, or someone from Kenya who frequently "runs down to the store to get a few things" then the meat would be decidedly red. But if the person were a typical American, i.e. couch potato, then the meat would be quite white. The breast meat of chickens and turkeys is white because of the lack of use or exercise, i.e. no flying done by these birds, and lets face it, pigs are not very athletic either. The breast meat of ducks, quail, doves, and other game birds is dark, believe it or not, because these birds actually FLY! The redness or whiteness of the meat depends on the content of Myoglobin, an Oxygen storage protein similar to Hemoglobin in your blood. Low athleticism results in the cells neglecting to make much Myoglobin, yielding whiter, tenderer, jucier meat.
