Personally I think he didn't fit in with their drug / groupie lifestyle. He was all about the music, and blues based music at that.
In my opinion, after he left the Stones took a dive. Their best music was Let it Bleed, Sticky Fingers, Get your YaYas Out, Beggars Banquet, Its only Rock n Roll. In other words the music with Taylor on lead. My favorite Taylor guitar songs were the solos on Time Waits For No One and Sympathy For The Devil (Though as a Christian I hate the words now).
He had some great pre Stones guitar work with John Mayalls Blues Band. He was actually Eric Claptons replacement.

Good question! I think he couldn't take the lifestyle. Needed a new septum, etc.
