The way you can tell if it the thermostat, when you first start up, your radiator hoses should feel limp and you can compress them easily, by hand.
Only use gloves or shop towels to try this. When the temp starts to climb, try pressing the hoses again, and if they do not feel hard, (water pressure in them), then your stat is sticking. When you turn your heater on, is helps cool the water.
You could also have a slight water leak and this will cause you to loose water pressure and it will overheat. Also replace the radiator cap, if it leaks, you loose pressure and will over heat.
Usually when a water pump goes, it leaks like mad and you would be able to smell the hot water.

You will have to jack the front of most cars so the radatior cap is higher than the engine and add coolant very slowly engine at idle heater turned on so the system will burp. Or on some cars there is a bleeder screw to accomplish the same thing. Sounds like the coolant bottle got empty and engine cooled and sucked in air.

1. have the engine timed
2. double check your main and aux fan, maybe one of them is not working...maybe both
3. have your radiator checked for clogs
4. water pump might not be working properly...or might not be working at all
5. double check your aircon compressor (if you have one) and alternator; the bearings might be worn out causing the engine to work double time
6. you did not mention that your radiator does not have a leak; does it?
