I had a dwarf potted palm (Neanthe bella) for about ten years, from high school until about four years after college when I moved to another country. I also had an asparagus fern (A. sperengeri). The two had nice contrasting textures, and were fairly low maintenance, as opposed to an African violet, or something like that.
I bought them cheaply in 4" pots and kept putting them in bigger pots as they became rootbound. If there's a taproot growing out the drainage hole in the bottom, it's time for a new pot.

I had a cactus and a potato plant...
For the potato one - cut off a side of potato with a good eye or two on it, stick in some toothpicks, and submege the cut (non-tkin) part into some water -the toothpicks hold the eyes out of the water- and watch it bloom! Can later plant it in dirt once the roots take off!

I never had any plants when I was in the dorm, but if I do, I'd suggest a cactus, because they just look so cool. and you don't have to water it lol.

Get fake ones. Real ones can harbor bugs you really don't want around old pizza, dirty underwear, and all the other typical stuff in a dorm room!

Ivy plants tend to be pretty easy to grow and take care of. I kept a couple of ivy's in my room. African Violets are nice too.

i had a rubber plant, a ponytail palm and a lucky bamboo plant.
i needed stuff that was easy to take care of... i sort of have a black thumb, lol.

Cactus and bromilliads (spelling?). You might want to try orchids too (just the cheap ones). You don't have to water them everyday, and they grow (and have flowers) even if you don't give them much attention.
