Approach one of the other security guards you see at the mall and ask them who their employer is and how to get in contact with them.
Undercover security officers are usually hired by the individual chain store. You'd need to inquire at one of those large stores and ask to speak with representative in their security department.

Basically go to the customer service desk and ask for an application. Some might have plain clothes security guards it doesn't hurt to ask.
